South African Bobotie With Sambal

Ingredients:
- 15 ml sunflower oil
- 2 onions, chopped
- 600 g lean beef mince
- 3 garlic cloves, crushed
- 10 ml freshly grated ginger
- 1 chilli, finely chopped
- 5 ml ground cumin
- 5 ml paprika
- 10 ml turmeric
- 5 ml ground cinnamon
- 5 ml salt
- 45 ml tomato paste
- 60 ml raisins
- 70 ml breadcrumbs
- 60 ml First Choice Milk
- 60 ml chutney
- zest of 1 lemon
Preparation method:
- Preheat the oven to 180°C.
- Saute the onion, garlic, ginger and chilli in the oil and add the meat.
- Stir fry until cooked and add all the spices, tomato paste and the raisins.
- Combine the breadcrumbs and the milk in a small container and soak for 5 minutes then add to the meat.
- Finally add the chutney and lemon zest. Mix well and taste to adjust the seasoning.
- Leave to cool and spoon into an ovenproof dish.
- Combine the egg and milk to make the custard. Season and beat well together.
- Pour over the meat and top with the bay leaves.
- Cover with foil and bake for 30 minutes at 180°C. Remove the foil and bake until the egg is set.
- Serve with rice, tomato and onion sambal, chutney and banana slices
