Ingredients:

  • 100g digestive biscuits, crushed
  • 50g FIRST CHOICE butter, melted
  • 240g cream cheese at room temperature
  • 45ml caster sugar
  • 60ml FIRST CHOICE Pine dessert topping
  • 250ml FIRST CHOICE whipping cream, chilled and whipped

FOR SERVING

  • 1 small pineapple, peeled, sliced and cut into small wedges
  • 80ml coconut flakes, toasted
  • FIRST CHOICE Pine Dessert Topping for drizzling

Preparation method:

TO MAKE THE CRUST:

  1. Combine the crushed biscuits and the melted butter and spoon into 6 serving glasses/dishes. Press down with a spoon.

TO MAKE THE PINE CHEESECAKE FILLING:

  1. Beat together the cream cheese, caster sugar and the pine dessert topping until slightly whipped.
  2. Fold in the whipped cream and spoon the mixture into a piping bag.
  3. Pipe the cheesecake filling on the crust into the serving glasses/dishes.
  4. Garnish with the pineapple wedges and sprinkle over some toasted coconut flakes.
  5. Drizzle with a little of the FIRST CHOICE Pine dessert topping just before serving.
