Ingredients:
- 100g digestive biscuits, crushed
- 50g FIRST CHOICE butter, melted
- 240g cream cheese at room temperature
- 45ml caster sugar
- 60ml FIRST CHOICE Pine dessert topping
- 250ml FIRST CHOICE whipping cream, chilled and whipped
FOR SERVING
- 1 small pineapple, peeled, sliced and cut into small wedges
- 80ml coconut flakes, toasted
- FIRST CHOICE Pine Dessert Topping for drizzling
Preparation method:
TO MAKE THE CRUST:
- Combine the crushed biscuits and the melted butter and spoon into 6 serving glasses/dishes. Press down with a spoon.
TO MAKE THE PINE CHEESECAKE FILLING:
- Beat together the cream cheese, caster sugar and the pine dessert topping until slightly whipped.
- Fold in the whipped cream and spoon the mixture into a piping bag.
- Pipe the cheesecake filling on the crust into the serving glasses/dishes.
- Garnish with the pineapple wedges and sprinkle over some toasted coconut flakes.
- Drizzle with a little of the FIRST CHOICE Pine dessert topping just before serving.
