Ingredients:
Crust ingredients:
- 200g chocolate cookies, crushed
- 70g FIRST CHOICE Butter, melted
Ice cream ingredients:
- 600ml FIRST CHOICE Vanilla Velvet, chilled
- 100g chopped peppermint chocolate
- A few drops of green food colouring
To garnish:
- Chopped peppermint chocolate
- Fresh Mint leaves
Preparation method:
- Combine the crushed chocolate cookies and melted butter. Then line a 22cm springform cake tin to make a crust.
- Whip the chilled Velvet until light and foamy then add the food colouring.
- Fold in the chopped peppermint chocolate and pour the mixture into the prepared crust.
- Freeze overnight.
TO SERVE:
- Remove from the cake tin and place on a serving platter.
- Decorate with the chopped peppermint chocolate and fresh mint leaves.
Serve immediately and enjoy!
