Ingredients:

Crust ingredients:

  • 200g chocolate cookies, crushed
  • 70g FIRST CHOICE Butter, melted

Ice cream ingredients:

  • 600ml FIRST CHOICE Vanilla Velvet, chilled
  • 100g chopped peppermint chocolate
  • A few drops of green food colouring

To garnish:

  • Chopped peppermint chocolate
  • Fresh Mint leaves

Preparation method:

  1. Combine the crushed chocolate cookies and melted butter. Then line a 22cm springform cake tin to make a crust.
  2. Whip the chilled Velvet until light and foamy then add the food colouring.
  3. Fold in the chopped peppermint chocolate and pour the mixture into the prepared crust.
  4. Freeze overnight.

TO SERVE:

  1. Remove from the cake tin and place on a serving platter.
  2. Decorate with the chopped peppermint chocolate and fresh mint leaves.

Serve immediately and enjoy!
