Chocolate Vegan Doughnuts with Dark Chocolate Honey Drizzle topped with Chunky Crunchie/Honeycomb

Ingredients:
- 280ml flour
- 50ml dark cacao powder
- 5ml baking powder
- 50ml castor sugar (45g)
- 1ml salt
- 50g First Choice raw creamed canola honey
- 60ml sunflower oil
- 180ml First Choice vanilla flavoured oat milk
- 1 small ripe and mashed banana, mixed with 5 ml lemon juice
- 5ml vanilla essence
For the chocolate glaze:
- 200g dark chocolate
- 50ml First Choice vanilla flavoured oat milk
- 20ml First Choice raw creamed canola honey
Preparation method:
- TO MAKE THE DOUGHNUTS: Preheat the oven to 170°C and spray a doughnut pan with Spray&Cook.
- Sieve together the flour, cacao, baking powder, castor sugar and the salt.
- Combine the honey, oil, oat milk , mashed banana and vanilla and add to the dry ingredients. Mix gently to combine.
- Spoon the batter into the prepared doughnut pan – fill about ¾ of the way full (do not overfill).
- Bake for ± 10 minutes until cooked. Cool a few minutes in the pan then carefully transfer the doughnuts to a cooling rack.
- TO MAKE THE GLAZE: Combine all the chocolate glaze ingredients in a bowl and heat on a low power setting in the microwave until melted. Stir regularly. Mix to make a smooth glaze.
- Dip the cooled doughnut tops into the glaze and allow to drain on a cooling rack.
- Decorate with chopped crunchie/honeycomb bits.
