Ingredients:
For the Butterscotch Syrup:
- 2 cups First Choice Butterscotch Velvet
- 1 cup water
- ½ cup sugar
For the Koeksisters:
- 500 ml flour
- 20 ml baking powder
- 1 egg
- 245 ml First Choice Amasi
- 20 ml First Choice Butter
Preparation method:
For the Butterscotch Syrup:
IMPORTANT: Make the First Choice Butterscotch Velvet syrup a day before making the koeksisters and chill in the fridge overnight.
- Heat the First Choice Velvet, water and sugar in a pot until boiling point.
- Chill in the fridge overnight.
- Place the syrup in the freezer for an hour before you start baking the koeksister.
- Place the container of syrup on a bed of ice while you are using it to dunk the koeksisters in.
- It is important that it is very cold.
For the Koeksisters:
- Sift the dry ingredients together.
- Rub the First Choice Butter into flour mixture with your fingers.
- Mix the egg with the First Choice Amasi.
- Make an indentation in the flour to make a little dam.
- Pour the First Choice Amasi and egg mixture into the 'dam'.
- Knead until a smooth dough.
- Cover with a damp cloth for an hour or two.
- Roll out the dough to aproximately 5mm thickness.
- Cut the dough into rectangles of 10cm x 3cm.
- Make two cuts into each rectangle about 1 cm from the top to make 3 parts to braid.
- Braid each koeksister and pinch the bottoms and tops.
- Deep fry the koeksisters in sunflower oil for 3 to 5 minutes or until dark golden brown.
- Place the cooked koeksisters on paper towel for a quick moment to drain.
- Quickly submerge the koeksister in the chilled butterscotch syrup for a few minutes until they are drenched. It should make a sizzling sound when the koeksister is dunked.
- Place the dunked koeksisters on a dry rack until the excess syrup has drained. Chill & enjoy!
