Butternut Butterscotch Puffs

Ingredients:
For the puffs:
- 1 cup cooked butternut
- 1 egg ¼ cup self-raising flour
- 5 ml baking powder
- Pinch of salt
- Oil, for frying
For the sauce:
- 500 ml First Choice Butterscotch Velvet
- ¼ cup First Choice Butter
- ¼ cup brown sugar
Preparation method:
For the puffs:
- Cook the butternut and allow to cool.
- Beat the egg and cooled butternut together.
- Add flour and baking powder, and mix well.
- Fry teaspoon sized scoops of the butternut mixture in hot oil until golden brown.
Keep the butternut puffs small, to ensure that each puff is cooked.
For the sauce:
- In a saucepan, heat the First Choice Butterscotch Velvet.
- Add the First Choice Butter and brown sugar, and stir.
- Bring to the boil, then take off the heat.
For best results, place puffs directly into the sauce after cooking!
