Ingredients:
- 15 ml Olive Oil
- finely chopped onions
- 2 tsp finely chopped garlic
- 1 kg mince
- 4 tsp curry powder
- 1 tsp turmeric
- 2 tsp salt black pepper to season
- 2 tbsp lemon juice
- 2 tbsp fine apricot jam
- ½ cup chutney
- 2 tbsp tomato sauce
- 2 tbsp brown sugar
- 2 tbsp worcestershire sauce
- 2 slices of white bread, soaked in milk
- 1 box of phyllo pastry
- 5 tbsp First Choice Butter (melted)
Preparation method:
- Heat the olive oil and fry the onion and garlic.
- Add the mince.
- In a mixing bowl combine the curry powder, turmeric, salt, black pepper, lemon juice, jam, chutney, sugar, tomato sauce and soaked bread. Mix until combined.
- Add the sauce to the browned meat, and simmer for 30 minutes, mixing through regularly.
- Let the mince cool down completely to room temperature.
- Preheat oven the to 180°C.
- Cut phyllo pastry into 12 cm x 12 cm squares. (Ensure that your hands are dry.)
- Use 3 sheets for 1 Spring Roll.
- Put 2 tablespoons of mince diagonally, in the middle of the pastry.
- Tuck in the top and sides over the mince, brush the rest with butter and roll down.
- Poke the spring rolls with a skewer in a few different places to prevent the pastry from bursting.
- Line the oven pan with baking paper and place the Spring Rolls on the pan.
- Bake at 180°C for about 15 minutes until golden.
