Ingredients:
- 30 ml First Choice Olive Oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 10 ml ginger, freshly grated
- 1 chilli, finely chopped
- 500 g lean beef mince
- 5ml ground cumin
- 5 ml paprika
- 5 ml turmeric
- 5 ml ground cinnamon
- 100 ml fresh coriander and parsley, chopped
- 40 g raisins
- 20 ml tomato paste
- 40 ml chutney
- 60 ml spring onion, chopped
- 1 egg yolk
- 8 sheets phyllo pastry
- 100 g First Choice Butter, melted
- salt to taste
Preparation method:
- Preheat the oven to 180 °C and linea baking tray with baking paper.
- Pour the First Choice Olive Oil in a sauce pan and heat on medium heat. Add the onion, garlic, ginger and chilli to the oil and sauté until the onion is soft.
- Add the meat and season.
- Stir fry until the meat is cooked then add all the spices, the coriander, parsley, raisins, tomato paste, chutney, chopped spring onion, egg yolk, and salt.
- Mix well to make the filling.
- Leave to cool completely.
- Brush sheets of phyllo pastry with melted First Choice Butter, place another sheet of phyllo pastry on top and brush with more melted butter.
- Cut into long strips of ±10 cm wide.
- Place a heaped teaspoon of filling on the bottom left corner of each strip and fold into a triangle. Now take it upwards to form another triangle. Repeat this process until you reach the end.
- Brush the finished samoosas with more butter before baking.
- Bake on the prepared baking tray for 15 minutes at 180°C (or until golden brown and crisp).
- Serve with tomato chilli jam and fresh coriander.
