Ingredients:

  • 400 g large raw, peeled prawns with tails on 
  • 150 g Roma tomatoes, cut into halves or quarters 
  • 30 ml lemon juice 
  • Zest of 1 lemon 
  • 40 ml olive oil 
  • 2 garlic cloves, crushed 
  • 2,5 ml dried chili flakes 
  • 5 ml dried oregano 
  • Salt and black pepper to taste 
  • 200 g FIRST CHOICE feta cheese, broken into chunks 
  • Chopped Italian parsley

Preparation method:

  1. Preheat the oven to 200°C.
  2. Toss together the prawns, tomato, lemon juice and zest, olive oil, garlic, chili, oregano and salt and pepper.
  3. Tip into an ovenproof dish/pan and add the chunks of feta.
  4. Baste with some of the pan juices and bake in the oven for ±25 minutes until the prawns are cooked and the cheese starting to brown.
  5. Scatter over the parsley and serve with crusty bread.
