Ingredients:

For the cake:

  • 6 eggs
  • 3 cups sugar
  • 3 ½ cups flour
  • ¾ cup cocoa
  • 15 ml baking powder
  • 5 ml salt
  • 10 ml vanilla essence
  • 200 g First Choice Butter
  • ¾ cup oil
  • 3 cups First Choice Amasi
  • 4 tsp instant coffee dissolved in a cup of warm water

For the sauce:

  • 1 cup sugar
  • 100 g First Choice Butter
  • 1 cup First Choice Amasi
  • 5 ml vanilla essence

For the ganache:

  • 125 ml First Choice Chocolate Velvet
  • 250 ml dark chocolate

Preparation method:

The Cake:

  1. Preheat oven to 180°C
  2. Cream First Choice Butter and sugar together in a mixer until light and fluffy
  3. Add the eggs, vanilla essence, and 3 cups of First Choice Amasi and mix for a minute
  4. Add the coffee dissolved in warm water and mix for another minute
  5. In a separate bowl, sieve the flour, cocoa, baking powder and salt together
  6. Mix the oil into the wet ingredients.
  7. Mix the dry mixture with the 'wet' mixture in 3 increments and mixing inbetween until the batter is smooth.
  8. Grease 2 medium-sized cake pans with First Choice Butter and dust lightly with cocoa
  9. Divide the batter between the two pans and then bake for between 40 to 45 minutes

The Sauce:

  1. Heat the First Choice Butter, sugar, amasi, vanilla essence in a pot over medium heat for about 5 minutes
  2. When the cake is baked, let it sit for 10 minutes. Use a fork to poke holes in the cake and then pour the sauce over

The Ganache

  1. Heat the First Choice Chocolate Velvet in a glass bowl in the microwave until boiling point
  2. Break the dark chocolate into pieces and add to hot First Choice Chocolate Velvet
  3. Let it sit / melt for 2 min
  4. Mix slowly with a handheld whisk until all the lumps dissolve (microwave for a minute if there are still lumps)
  5. The ganache will thicken on standing
  6. Once thickened apply the ganache to the cake
