Amasi Lemon Delicious Pudding (with lemon curd and yoghurt crème fraiche)

Ingredients:
- 80g First Choice butter at room temperature
- 160ml castor sugar * Finely grated zest of 2 lemons
- 3 eggs, separated
- 2ml salt
- 375ml First Choice milk
- 500ml First Choice amasi
- 125ml cake flour
For the yoghurt crème fraiche:
- 150ml crème fraiche
- 100ml First Choice full cream yoghurt
- 20ml First Choice honey
- Lemon zest
For the quick and easy lemon curd:
- 2 large eggs
- 2 egg yolks
- 140g castor sugar
- 125ml lemon juice
- zest of 1 lemon
- 110g First Choice butter (cubed)
Preparation method:
- Cream the butter, 100ml of the castor sugar and the lemon zest together.
- Add the egg yolks one at a time and beat well after every addition.
- Mix in the flour and salt, then gradually add the milk and amasi.
- In another bowl, beat the egg whites until soft peak stage and then beat in the 60ml castor sugar.
- Fold the egg whites into the runny batter.
- Pour into a well-greased dish and bake for ±30 minutes at 170°C.
- Eat warm or cold with a drizzle of lemon curd and some yoghurt crème fraiche or homemade custard.
- TO MAKE THE YOGHURT CRÈME FRAICHE: Combine all the ingredients and mix gently together.
- TO MAKE THE QUICK AND EASY LEMON CURD: Mix together all the ingredients in a saucepan and place on low heat. Stir all the time until it starts to thicken and gently starts to boil. Remove from the heat, strain through a sieve immediately to remove any possible lumps and cool. Store in the fridge for a couple of days.
