Amasi Flatbreads with Marinated Chicken Skewers

Ingredients:
MARINATED CHICKEN
- 30ml olive oil
- 4 garlic cloves, crushed
- 10ml dried oregano
- 5ml siracha sauce
- 10ml rosemary, chopped
- 5ml honey
- Zest of 1 lemon
- 30ml lemon juice
- 60ml FIRST CHOICE Amasi
- 600g chicken (deboned thighs or fillets), cut into bite sized pieces
- 8 bamboo skewers, soaked in water
AMASI FLATBREADS
- 300ml FIRST CHOICE Amasi
- 280g self-raising flour
- 30ml olive oil
- 5ml salt
- Olive oil for brushing
TO SERVE
- Storebought or homemade tzatziki or use FIRST CHOICE Plain Double Cream Dairy Snack
- Homemade tomato, chilli and red onion relish
- Fresh coriander
Preparation method:
- Combine the oil, garlic, oregano, sirracha, rosemary, honey, lemon zest and juice and the amasi together and add the chicken. Marinate for 1-4 hours.
- Drain off most of the marinade and skewer the chicken pieces onto the bamboo skewers.
- Chargrill the chicken skewers on a griddle pan on both sides until cooked, lightly charred and golden brown. Season with salt and pepper and serve with tzatziki, flatbreads and a homemade tomato relish.
TO MAKE THE FLATBREADS:
- Combine the self-raising flour and salt and mix well.
- Make a well in the dry ingredients and add the amasi and olive oil. Mix well to make a dough and gently knead the dough on a floured surface for a minute.
- Cover and rest the dough for 30 minutes. In the fridge.
- Divide dough in 6, roll and stretch to make oval flatbreads.
- Cook in a dry pan or griddle pan on both sides until lightly charred.
- Brush extra olive oil or melted butter and lightly sprinkle with salt.
