Ingredients:

  • 12 chicken pieces, cut into winglettes
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cups First Choice Amasi
  • 2 eggs, beaten
  • 1½ cups self-rising flour, to coat
  • 2 l canola oil
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp dry thyme
  • 1 tsp oregano

Preparation method:

  1. Sprinkle the chicken with salt and pepper.
  2. Add the First Choice Amasi and the eggs in a shallow dish and mix.
  3. Place the chicken in a zip-lock plastic bag and add the Amasi mixture.
  4. Seal, and chill for at least 2 hours.
  5. Pour the oil to a depth of 10cm deep in a heavy bottom pan or pot heat to 180°C.
  6. While the oil is heating up mix the flour with all the spices, herbs and seasoning.
  7. Remove the chicken from the Amasi, discarding Amasi. Drench the chicken in the seasoned flour.
  8. Add the chicken in the oil, a few pieces at a time and cook for about 9 minutes or until the chicken is cooked all the way through, turning the chicken halfway of the cooking time.
  9. Drain on paper towels, and then you are ready to serve.
