Ingredients:

  • 80g castor sugar
  • Zest of 1 small clementine
  • 2 eggs
  • 60ml First Choice Amasi
  • 140g flour
  • 5ml baking powder
  • 2ml salt
  • 80g First Choice Butter, melted

Clementine Syrup:

  • 80g First Choice Honey
  • 60ml sugar
  • 60ml clementine juice
  • Zest of 1 clementine

Preparation method:

  1. Preheat the oven to 170°C.
  2. Beat together the castor sugar, zest and eggs. Add the amasi.
  3. Sieve the flour, baking powder and salt together and fold into the egg mixture then fold in the melted butter to make the batter. Cover and rest for 1 hour in the fridge.
  4. Brush the madeleine moulds with butter and dust well with flour.
  5. Spoon 1 heaped Tbsp batter into each mould and bake for about 9 mins until golden brown and cooked. Transfer to cooling rack.
  6. TO MAKE THE SYRUP: Mix together all the ingredients and simmer for a few mins. Brush liberally over the shell-patterned side of the Madeleines. Sprinkle with more zest (optional).
