Amasi, Clementine and Honey Madeleines

Ingredients:
- 80g castor sugar
- Zest of 1 small clementine
- 2 eggs
- 60ml First Choice Amasi
- 140g flour
- 5ml baking powder
- 2ml salt
- 80g First Choice Butter, melted
Clementine Syrup:
- 80g First Choice Honey
- 60ml sugar
- 60ml clementine juice
- Zest of 1 clementine
Preparation method:
- Preheat the oven to 170°C.
- Beat together the castor sugar, zest and eggs. Add the amasi.
- Sieve the flour, baking powder and salt together and fold into the egg mixture then fold in the melted butter to make the batter. Cover and rest for 1 hour in the fridge.
- Brush the madeleine moulds with butter and dust well with flour.
- Spoon 1 heaped Tbsp batter into each mould and bake for about 9 mins until golden brown and cooked. Transfer to cooling rack.
- TO MAKE THE SYRUP: Mix together all the ingredients and simmer for a few mins. Brush liberally over the shell-patterned side of the Madeleines. Sprinkle with more zest (optional).
