Amasi and Cheese Waffles with Avo, Smoked Ham, Egg and Mashed Avocado

Ingredients:

  • 220g flour
  • 60ml corn flour (35 g)
  • 15ml baking powder
  • 2,5ml smoked paprika
  • 5ml garlic and herb
  • 1ml Salt
  • 110g FIRST CHOICE Mature Cheddar, grated
  • 3 eggs, separated
  • 100g sweet corn
  • 60g corn kernels
  • 80g FIRST CHOICE Butter, melted
  • 375ml FIRST CHOICE Amasi

TO SERVE

  • 4 soft boiled eggs
  • 100g blanched asparagus
  • 80g smoked ham
  • 1 large avocado, mashed with a little lemon juice and seasoned with salt and pepper

CHEAT'S HOLLANDAISE (Optional)

  • Combine 80ml good quality mayonnaise, 30ml FIRST CHOICE Amasi, 5 ml lemon juice, 2,5 ml Dijon mustard and some lemon zest together in a jug and stir well.

Preparation method:

1. Preheat waffle maker.
2. In a medium bowl, sift together flour, baking powder, salt and spices. Mix in the grated cheese.
3. Whisk together the egg yolks and buttermilk. Add the melted butter, sweet corn and corn kernels then add to dry ingredients. Mix in gently to make a batter.
4. Beat egg whites with an electric mixer until the whites hold medium peaks.
5. Fold in 1/3 of egg whites into batter to lighten then add the remaining egg whites and fold until almost incorporated.
6. Scoop some batter into preheated waffle maker. You may need more or less batter depending on your specific machine. Cook for about 5 minutes or until waffles are deep golden brown and crispy.
7. Remove and serve warm.

TO SERVE:
Top waffles with some mashed avocado, blanched asparagus, soft boiled egg and smoked ham. Drizzle over some CHEAT'S HOLLANDAISE.
