Ingredients:

For the cupcake:

  • 250g fresh, mixed berries, chopped (raspberries, blueberries, strawberries)
  • 250ml First Choice Whipping Cream
  • 200g castor sugar (240ml)
  • 75g melted butter
  • 3 eggs
  • 5ml vanilla extract
  • Pinch of salt
  • 230g self-raising flour (450ml)

For the strawberry frosting:

  • 150g First Choice Butter
  • 100g cream cheese
  • 200g icing sugar, sifted (375ml)
  • 30ml First Choice Strawberry Dessert Topping

To decorate:

  • Fresh berries and First Choice Strawberry Dessert Topping (optional)

Preparation method:

  1. TO MAKE THE CUPCAKES: Preheat the oven to 170°C. Place cupcake papers in 2 muffin pans.
  2. Beat together the cream and castor sugar until light and airy.
  3. Mix together the melted butter and eggs and add it to the whipped cream mixture, mix gently to combine.
  4. Add the vanilla and salt and sieve in the self-raising flour. Fold in gently to make the batter.
  5. Spoon the batter into the cupcake papers and place some of the chopped berries into the batter.
  6. Bake for about 20 mins until cooked and golden brown. Cool completely.
  7. TO MAKE THE FROSTING: Beat together the cream cheese and butter. Gradually add the icing sugar and the strawberry dessert topping and beat on high speed until light and fluffy (about 10 mins).
  8. Spoon the frosting into a pipping bag fitted with a star nozzle.
  9. Pipe the frosting on the cupcakes. Garnish with more fresh berries and a drizzle of strawberry dessert topping!
