Ingredients:

For the Muffins:

  • 500 ml cake flour
  • 15 ml baking powder
  • 15 ml sugar
  • 10 ml garlic and herb seasoning
  • 150 ml First Choice Feta Cheese, crumbled
  • 250 ml First Choice Cheddar Cheese, grated
  • 200 g spinach, cooked & drained (200g uncooked spinach)
  • 2 eggs
  • 125 ml First Choice Olive Oil
  • 250 ml First Choice Amasi

For the Tzatziki:

  • 1 small cucumber, peeled and seeded
  • 2 garlic cloves, crushed
  • zest and juice of 1 lime or small lemon
  • 200 ml First Choice Double Cream Plain yoghurt
  • 30 ml First Choice Olive Oil
  • 30 ml mint (or half mint and half coriander), chopped
  • salt and pepper for seasoning

Preparation method:

For the Muffins:

  1. Preheat the oven to 200 °C. Grease a muffin pan (you can line it with paper cups if you prefer).
  2. Mix the flour, baking powder, sugar and seasoning together in a mixing bowl.
  3. Add the First Choice Feta and First Choice Cheddar Cheese. Mix well into the dry ingredients and add the spinach.
  4. In a separate bowl, mix the eggs, First Choice Olive Oil and First Choice Amasi together.
  5. Add the liquid ingredients to the dry ingredients and mix very lightly using a metal spoon.
  6. Spoon the batter into the prepared muffin pan.
  7. Bake for about 15-20 minutes.
  8. Serve with butter and tzatziki for extra deliciousness.

For the Tzatziki:

  1. Grate the cucumber and mix it with 5 ml salt. Place it in a sieve over a bowl to drain for 10 minutes or longer. Press with a spoon to squeeze out any liquid
  2. Mix the drained cucumber with the rest of the ingredients and serve.
  3. You can also make it the day before and store it in the fridge.
