Mushroom, Caramelised Onion and Camembert Cheese Tarts

Ingredients:
- 1 roll puff pastry
- 2 medium onions, sliced and sautéed in a little olive oil till golden brown and cooked
- 200g mushrooms, sliced and cooked in a little olive oil, seasoned
- 1 FIRST CHOICE French Camembert cheese, sliced
- Fresh thyme
- Egg wash (1 egg beaten with 30ml FIRST CHOICE Milk)
Preparation method:
- Preheat the oven to 200°C and line a baking tray with baking paper.
- Unroll the pastry and use a pastry cutter or sharp knife to cut 8 rectangles of about 12cm x 9cm. Use a knife to score a crust around the outside of each tart.
- Transfer the tarts to the prepared baking tray and brush the crust with egg wash.
- Spread some caramelised onion in the centre of each tart, top with slices of the cheese and lastly some mushrooms.
- Bake the tarts for about 15 minutes until golden brown and puffed.
- Best served immediately with some fresh thyme and a drizzle of honey.
