  • 110g flour
  • 45ml cornflour
  • 5ml baking powder
  • 1ml salt
  • 70g castor sugar
  • 45ml poppy seeds
  • 20ml lemon juice
  • 80ml sunflower oil
  • 80ml First Choice Harvest
  • 5ml vanilla extract
  • Zest of 1 small lemon

For the lemon glaze:

  • 120g sifted icing sugar
  • 35ml lemon juice

Preparation method:

  1. Preheat the oven to 175°C. Grease and dust the moulds of a madeleine pan with flour.
  2. Sieve together the flour, cornflour, baking powder, salt and castor sugar. Mix in the poppyseeds and stir to combine.
  3. In another bowl combine the lemon juice, oil, First Choice Harvest, vanilla and zest.
  4. Make a well in the dry ingredients.Pour the liquid into the dry ingredients and mix to combine and make the batter.
  5. Cover the batter and rest for 15 mins in the fridge. Spoon the batter into a piping bag.
  6. Pipe some of the batter into each mould, do not overfill, and bake for ± 12 mins until golden brown and cooked. Transfer to a cooling rack.
  7. TO MAKE THE LEMON GLAZE: Mix together the sifted icing sugar and the lemon juice. Brush liberally over the shell-patterned side of the Madeleines. Sprinkle with lemon zest and serve.
