Ingredients:

*Tip - Place First Choice Velvet in the freezer for 1 hour before use
For the ice-cream:

  • 500 ml First Choice Velvet

For the cookies:

  • 150 g salted butter (soft)
  • 80 g white sugar
  • 80 g brown sugar
  • 1 large egg
  • 1 tsp vanilla essence
  • 225 g plain flour
  • 1 tsp bicarbonate of soda
  • 220 g chocolate chips
  • pinch of salt

Preparation method:

For the ice-cream:

  1. Beat chilled Velvet in an electric mixer until thick.
  2. Place in a container and freeze overnight.

For the cookies:

  1. Preheat the oven to 190 °C.
  2. In a bowl, beat the butter and sugar together until creamy.
  3. Mix in the vanilla essence and the egg.
  4. Sieve the flour, bicarbonate of soda, and salt into the mixture and mix with a wooden spoon.
  5. Add chocolate chips. Stir well.
  6. Roll cookie dough into balls.
  7. Place on a baking tray and bake for 8-10mins. Allow to cool before use.

For assembly:

  1. Scoop a medium sized ice cream ball onto a cookie. Use the spoon to press down slightly.
  2. Decorate with sprinkles. Place another cookie on top.
  3. Serve immediately. Eat and enjoy!
