Ingredients:

  • 100 g First Choice Butter, softened
  • ¾ cup castor sugar
  • ½ tsp vanilla essence
  • 2 small eggs
  • 1 cup self raising flour, sifted
  • ¼ cup cocoa, sifted
  • ½ cup buttermilk

  • 30 ml red food colouring

Preparation method:

  1. Preheat oven to 160°C.
  2. Beat the butter, sugar and vanilla in an electric mixer for 8–10 minutes or until pale and creamy.
  3. Add the eggs, one at a time, beating well after adding each.
  4. Add the flour, cocoa, buttermilk and food colouring and beat on low speed until combined.
  5. Spoon into a small greased cake tin.
  6. Bake for 45 minutes – 1 hour or until cooked.
  7. Turn onto a wire rack and allow to cool completely
