Ingredients:
For the Crust:
- 300 g chocolate digestive biscuits, crushed
- 60 g First Choice Butter, melted
For the Filling:
- 250 g cream cheese, room temperature
- ½ cup granulated sugar
- 1 canned mandarin segments
- 1 tsp vanilla essence
- 1 cup First Choice Custard
For the Decoration: OPTIONAL
- orange slices
- whipped cream
Preparation method:
For the Crust:
- Prepare a 25 cm springform pan or tart pan with baking spray and set aside. In a medium-sized bowl, mix together the biscuit crumbs and melted First Choice Butter together until combined.
- Press the crust mixture into the bottom (and sides) of the pan. Refrigerate for an hour.
For the Filling:
- Add the cream cheese, sugar, mandarin segments, and vanilla to your bowl and mix until smooth.
- Fold the First Choice Custard into the mixture.
- Remove the crust from the refrigerator and pour filling into it and smooth out with a spatula.
- Refrigerate the cheesecake for at least 6 hours.
OPTIONAL: Decorate and garnish with orange slices or whipped cream.
