Ingredients:

For the Crust:

  • 300 g chocolate digestive biscuits, crushed
  • 60 g First Choice Butter, melted

For the Filling:

  • 250 g cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 canned mandarin segments
  • 1 tsp vanilla essence
  • 1 cup First Choice Custard

For the Decoration: OPTIONAL

  • orange slices
  • whipped cream

Preparation method:

For the Crust:

  1. Prepare a 25 cm springform pan or tart pan with baking spray and set aside. In a medium-sized bowl, mix together the biscuit crumbs and melted First Choice Butter together until combined.
  2. Press the crust mixture into the bottom (and sides) of the pan. Refrigerate for an hour.

For the Filling:

  1. Add the cream cheese, sugar, mandarin segments, and vanilla to your bowl and mix until smooth.
  2. Fold the First Choice Custard into the mixture.
  3. Remove the crust from the refrigerator and pour filling into it and smooth out with a spatula.
  4. Refrigerate the cheesecake for at least 6 hours.

OPTIONAL: Decorate and garnish with orange slices or whipped cream.
