Ingredients:

  • 500ml cake flour
  • 15ml baking powder
  • 2ml salt
  • 30ml castor sugar
  • 2 eggs
  • 200ml First Choice milk
  • 250ml First Choice amasi
  • 90ml sunflower oil
  • 5ml vanilla essence
  • 150g fresh blueberries
  • extra melted First Choice butter for frying
  • 125ml crème fraiche
  • 30ml First Choice strawberry dessert topping
  • 200g crispy fried bacon for serving
  • 200g fresh berries for serving
  • First Choice strawberry dessert topping for drizzling

Preparation method:

  1. Sift together the dry ingredients.
  2. Mix together the eggs, milk, amasi, oil and vanilla.
  3. Add the liquids to the dry ingredients and mix until just combined – do NOT over mix the batter. Lastly stir in the blueberries.
  4. Grease/brush a frying pan lightly with the extra melted butter and drop tablespoons of the batter into the pan. Cook and turn gently to cook the other side.
  5. Repeat with the rest of the batter. Keep warm.
  6. TO MAKE THE STRAWBERRY CRÈME FRAICHE: Combine the crème fraiche and the 30ml strawberry dessert topping.
  7. TO SERVE: Serve the pancakes stacked on serving plates, add extra berries and top with some crispy bacon.
  8. Add a drizzle of strawberry dessert topping and serve with the strawberry crème fraiche on the side.
