Mac & Cheese

Ingredients:
 400 g dried macaroni
 15 ml First Choice Olive Oil
 200 g chopped bacon
 60 g First Choice Butter
 50 ml cake flour
 500 ml First Choice Milk
 200 g First Choice Cheddar Cheese, grated
 30 ml dijon mustard or english mustard
 15 ml garlic and herb seasoning
 salt and black pepper for seasoning
 125 ml First Choice Cream
 200 g vine tomatoes

Directions:

Drizzle vine tomatoes with a little First Choice Olive Oil and seasoning. Roast in the oven for 10 minutes on a baking tray.

Preheat the oven to 180°C.

Cook the macaroni in a pot with lots of salted water and drain. Keep aside.

Place the First Choice Olive Oil in a frying pan on medium heat, add the bacon and cook until crispy and brown.

Melt the First Choice Butter in a small saucepan on medium heat and add the flour. Cook for 2 minutes whilst stirring and remove from the heat.

Add all the First Choice Milk and stir very well with a whisk.

Return to the heat and cook whilst stirring until the sauce is thick and starting to boil.

Remove from the heat and add half of the grated First Choice Cheese, seasoning and the mustard. Mix well.

Place the cooked macaroni in an oven-proof dish and add the rest of the First Choice Cheese and the cooked bacon. Mix well and pour over the sauce.

Lastly pour over the cream and bake in the preheated oven for 20 minutes.

Remove from the oven and place the roasted vine tomatoes on top. Bake for another 5 minutes and serve immediately.
