Ingredients
For the cupcake:
 625 ml cake flour
 250 ml castor sugar
 7.50 ml bicarbonate of soda
 2.50 ml salt
 3 eggs
 300 ml sunflower oil
 350 ml First Choice Amasi
 30 ml lemon juice
 zest of 1 lemon
 80 ml First Choice Passion Fruit dessert topping
For the passion fruit cream cheese frosting:
 250 g First Choice Butter, room temperature
 250 g full fat cream cheese
 250 g First Choice Passion Fruit Dessert Topping

Directions
For the cupcakes:

Preheat the oven to 180°C and line 2 cupcake pans with papers.

Sieve together the cake flour, castor sugar, bicarbonate of soda and the salt. Mix well.

In another bowl – mix together the eggs, oil, First Choice Amasi, lemon juice, lemon zest and the First Choice Passion Fruit Dessert Topping.

Add the liquid ingredients to the dry ingredients and mix very well to make the batter.

Spoon the batter into 24 muffin cups and bake for 18-20 minutes in the preheated oven.

For the passion fruit cream cheese frosting:

Beat the First Choice Butter and cream cheese together for a few minutes.

Add the icing sugar and the First Choice Passion Fruit Dessert Topping and beat well until very light and fluffy.

Spoon the frosting into a piping bag.

To decorate:

Use a knife to cut out a cone in the centre of the cupcake and fill with a little of First Choice Passion Fruit Dessert Topping.

Pipe the frosting on the cupcakes and drizzle with a little passion fruit topping.
