Chicken Pie

Ingredients:
 100 g sliced leeks
 15 ml First Choice Olive Oil
 40 g First Choice Butter
 750 g deboned chicken fillets, cubed
 80 ml flour
 salt & pepper to taste
 5 ml barbeque spice
 100 ml First Choice Milk
 100 ml chicken stock
 100 g First Choice Cheddar Cheese, grated
 125 g First Choice Brie, sliced
 15 ml chopped thyme
 1 roll puff pastry
 30 ml egg wash

Directions:

Heat the First Choice Olive Oil and First Choice Butter in a saucepan.

Add the leeks and saute until cooked.

Add the chicken and cook for about 5 minutes. Season.

Add the flour and mix well.

Add the First Choice Milk and chicken stock, stir and cook until thick - cooking on low heat.

Remove from heat and add the First Choice Cheddar Cheese.

Cool completely.

Roll out the puff pastry and cut into two rectangles of 25cm x 25cm. (work on baking paper)

Spoon filling on the one rectangle – leave 2cm open around the sides and brush it with egg wash.

Top with the First Choice Brie slices and thyme.

Cover with the other pastry rectangle and press the edges to secure.

Cut a few slants to let steam escape and brush with egg wash.

Transfer to a large baking sheet.

Bake at 200ºC for about 30 minutes.
