Apple Crumble

Ingredients
For the Apple Cake:
 625 ml cake flour
 250 ml brown sugar
 7.50 ml bicarbonate of soda
 5 ml cinnamon
 2.50 ml salt
 3 eggs
 250 ml First Choice Vanilla Velvet
 250 ml oil
 3 granny smith apples, peeled and diced
 30 ml lemon juice
 125 ml First Choice Amasi
 5 ml vanilla extract
For the Crumble:
 250 ml flour
 125 ml sugar
 100 g First Choice Butter
 50 g pecan nuts, chopped
For the Frosting:
 250 g First Choice Butter
 250 g cream cheese
 30 ml First Choice Caramel Dessert Topping
 100 ml icing sugar
 vanilla seeds

Directions
For the Apple Cake:

Preheat the oven to 180°C and grease and line 3 X 20 cm cake tins.

Sieve together the flour, bicarbonate of soda, cinnamon and salt and mix in the brown sugar to combine all the dry ingredients.

Mix in the diced apple.

In another bowl mix together the eggs, First Choice Vanilla Velvet, oil, lemon juice, First Choice Amasi and the vanilla.

Make a well in the centre of the dry ingredients and add the liquid ingredients. Mix well to make the batter (but do not over mix).

Pour the batter into the prepared cake tins and bake for about 25 minutes until cooked. Remove from the oven and cool completely.

For the Crumbe:

Combine the flour and sugar and add the First Choice Butter.

Use your finger tips to rub in the First Choice Butter until the mixture looks like coarse meal.

Add the pecan nuts and spread onto a baking paper lined baking tray and bake in the oven for about 10 minutes. Cool.

For the Frosting:

Use an electric beater and beat together the First Choice Butter and cream cheese until light and fluffy.

On low speed, add the First Choice Caramel Dessert topping and then add the icing sugar and vanilla seeds. Beat on high speed until light and fluffy.

To Assemble:

Place one cake layer on a serving plate and top with some of the frosting.

Top with the second layer, more frosting and then the third cake layer.

Spread the remaining frosting over the top and sides of the cake.

Garnish the top of the cake with the crumble and drizzle with the caramel dessert topping
