Balsamic vinegar is a very dark, concentrated, and intensely flavoured vinegar, originating in Italy and made wholly or partially from grape must (crushed grape juice with all the skins, seeds and stems).
Aceto Balsamico di Modena (Balsamic Vinegar of Modena) is one of three protected balsamic vinegars. Balsamic Vinegar of Modena is made from grape must blended with wine vinegar and produced in Modena, Italy.
