Velvet and Oreo Ice Cream Cake

Mouthwatering Ice Cream cake - so delicious it won't even have time to melt.

Ingredients
 2 cups flour
 2 cups sugar
 12 tbsp cocoa
 3 tsp baking powder
 1 tsp salt
 180 ml First Choice Full Cream Milk
 180 ml vegetable oil
 2 tsp Vanilla essence
 2 large eggs
 2 large egg whites
 1 packet of chopped Oreo cookies
 1 l First Choice Vanilla Ice Cream
 1 l First Choice Chocolate Ice Cream
 1 packet of Oreo cookies
 500 g chopped chocolate
 250 ml First Choice Chocolate Velvet

Preparation

Mix the vanilla and chocolate ice-cream and oreo cookies and spoon on top the cakes in the cake pans. Smooth out ice cream until is level and put in the freezer for about 12 hours.

Preheat oven to 180°C and butter two medium cake pans.

Line the bottoms of the cake pans with baking paper: Trace the bottom of pan on baking paper and cut out two circles to place at the bottom of pans.

Sift flour, sugar, cocoa, baking powder, salt together in a large bowl.

Mix coffee, milk, oil, and vanilla essence together. Add the eggs and egg whites and mix in.

Combine the wet and dry ingredients and mix until it is a smooth batter.

Pour into two prepared cake pans and bake for 30-40 minutes. Allow the cakes to cool down completely until it is room temperature.

Take the cakes out of the pan and line pans with cling wrap before putting the cakes back in the pan. Make sure that the cling wrap hangs over the sides of pans (this will be used to pull the ice cream cake out of the pan).

Take the ice cream cakes out of the freezer and place on top of each other with the ice cream sides on the inside and cakes sides on the top and bottom.

Microwave chocolate with a cup of First Choice Chocolate Velvet to make a ganache . Drizzle ganache over the cake and sprinkle with chopped Oreos.
