Trifle with an Irish Flair

Better than the pot of gold at the end of a rainbow!

Ingredients for green velvet cake:
 ¼ cup green food colouring
 3 tbsp cocoa powder
 1 cup Unsalted First Choice Butter at room temperature
 1 ¾ cups sugar
 2 large eggs
 3 cups flour
 ½ cup corn flour
 1 tsp salt
 2 tsp vanilla essence
 1 cup First Choice Amasi
 1 cup sour cream
 1 tbsp white vinegar
Ingredients for trifle
 1 box crushed Oreo cookies
 1 l First Choice Vanilla Velvet
 1 crushed peppermint crisp chocolate
 crumbed green velvet cake

Directions for the green velvet cake:

In a small bowl, stir the food colouring and cocoa powder together to make a smooth paste. Set aside.

Using an electric mixer fitted with the paddle attachment, cream the First Choice Butter and the sugar on medium-high speed until light and fluffy for about 2 minutes.

Add eggs, one at a time, beating after each addition, then add the cocoa paste while continuing to beat. Reduce the mixer speed to medium and beat the batter for about 4 minutes.

In a medium bowl, sift together the cake flour, all-purpose flour, salt, and baking soda.

Stir the vanilla into the First Choice Amasi (this can be done in the measuring cup).

Add the flour mixture in 3 increments alternately with the First Choice Amasi in 2 increments, starting and ending with the flour.

Beat on medium speed until the ingredients are combined.

Add the sour cream and vinegar and beat on low speed until combined.

Bake for 25 to 35 minutes in a medium cake tin.

Leave on a cooling rack to cool down.

Directions for the trifle:

Put half of cake in the bottom of the bowl.

Pour half First Choice Chocolate Velvet Ganache over cake.

Layer half whipped First Choice Vanilla Velvet .

Sprinkle crushed Oreo.

Sprinkle crushed peppermint.

Repeat layering of ingredients with the remainder of ingredients.

Chill in fridge for 2 hours.
