Tomato and Cheese Soup

Ingredients:
 15 ml First Choice Olive Oil
 30 g First Choice Butter
 1 large onion
 3 garlic cloves, crushed
 60 ml tomato paste
 2 tins of Italian tomatoes, chopped
 15 ml sugar
 salt and black pepper for seasoning
 10 ml garlic and herb seasoning
 750 ml good quality chicken or vegetable stock
 80 g First Choice Cheddar Cheese, grated

Directions:

Heat the First Choice Olive Oil and First Choice Butter in a medium sized saucepan on medium heat and add the onion and garlic.

Saute for a few minutes until the onion starts to soften.

Add the tomato paste and cook for a minute.

Add the tomatoes, sugar, seasoning and stock and simmer for at least 30 minutes on low heat. Taste and adjust the seasoning.

Remove from the heat, add the First Choice Cheese and stir to melt the cheese. Use a stick blender to blend the soup.

Spoon the soup into oven-safe serving bowls and top each with 3 garlic toasts.

Sprinkle over some cheese and place the bowls under the grill to melt the cheese.

Sprinkle over some chopped herbs and serve immediately.

TO MAKE THE GARLIC TOASTS: Switch on the grill in your oven. Mix the First Choice Olive Oil and garlic and brush on the baguette slices. Place on a baking tray and toast under the grill on both sides.
