Sandwich Cake

Why eat a sandwich when you can eat a Cake Sandwich?

 

 

Ingredients:
 1 round 'pot' bread
 2 l First Choice Amasi, drained overnight
 200 g smoked salmon (or ham)
 ½ a cucumber
 2 carrots, peeled
 1 avocado
 4 eggs, boiled
 2 tbsp mayonaise
 170 g asparagus
 salt & pepper to taste

Directions:

Make your own cottage cheese - drain the First Choice Amasi using a tea towel and sieve, overnight.

Slice the bread, horizontally, into 4 slices using a bread knife.

Cook the asparagus and let it cool down.

Spread the bread with cottage cheese and top with sliced cucumber.

Spread the next slice of bread - with First Choice Butter on the bottom, and cottage cheese on top. Top with smoked salmon and sliced avo. (Keep a bit of salmon and avo for garnish)

Spread the next slice of bread - with First Choice Butter on both sides. Slice up the boiled eggs, mix with mayonnaise and spices, then place the egg-mayo onto the bread.

Spread the last slice of bread - with First Choice Butter on the bottom and cottage cheese on top. Use the rest of the cottage cheese to 'ice' the sides of the cake.

Cover the sides of the cake with slices of cucumber and carrot, and cooked asparagus. Top the cake with the remaining smoked salmon and avocado. Serve!
