Sago Pudding

Ingredients:
 6 eggs
 2 cups of sago
 1 l First Choice Milk
 ¾ cup sugar
 1 cinnamon stick
 100 g First Choice Butter
 pinch of salt
 1 l First Choice Custard

Directions:

Soak the sago in water for 1 hour.

Preheat the oven to 180°C.

Strain the water and add the First Choice Milk to the sago.

Add the sugar, cinnamon stick, pinch of salt and cook on stovetop over medium heat until it thickens up. Stir continuously while the mixture is cooking.

Separate the egg whites from the yolks and whisk the yolks.

Remove the pot from the stove. Add the First Choice Butter and whisked egg yolks.

Transfer the mixture to a greased oven dish.

Whisk egg whites until stiff and spoon over pudding. Alternatively, for a nice visual effect, spoon egg whites into a piping bag with a nozzle and pile on top of the pudding.

Bake at 180°C for 45 minutes to an hour.

Serve with delicious First Choice Custard.
