Potato Skins
Everyone's going crazy over potato skins - we get it!

Pre-heat the oven to 180°C.
Rince off the potatoes, prick with a fork and place in the microwave for 12 minutes on high.
Slice each potato in half and scoop out the insides into a bowl.
Use a brush to cover the potato skins with olive oil and bake for 10 minutes.
In a pan, cook the sliced onions in a bit of oil, balsamic vinegar and brown sugar until caramelised.
Add the First Choice Butter, salt, pepper and pesto to the leftover potato, and mash.
Remove the potato skins from the oven and top with First Choice Brie and onions.
Bake for a further 20 - 30 minutes until golden brown.
