For the Cake:
 4 tbsp flour
 2 tsp brown sugar
 1 tsp baking powder
 1 pinch nutmeg
 1 pinch salt
 2 tsp finely grated fresh carrots
 3 tbsp First Choice Milk
 ½ tsp vanilla essence
 1 egg
 1 tsp oil
  tsp ginger
For the Icing:
 2 tbsp cream cheese
 1 tbsp First Choice Butter
 2 tsp castor sugar

Directions:
For the Cake:

Mix all ingredients and pour into two microwave-safe mugs.

Microwave on high for 2 to 3 minutes.

For the Icing:

Microwave icing for 30 seconds and pour over carrot cake and sprinkle with walnuts.
