Hot Cross Bun Cupcakes

Ingredients:
For the Cup Cakes:
 2 ½ cups cake flour
 2 tsp baking powder (heaped)
 ½ tsp salt
 2 cups sugar
 1 cup First Choice Amasi
 ½ cup First Choice Milk
 5 ml vanilla essence
 4 eggs
 1 orange zest
 1 grated green apple
 1 tsp all spice
 1 tsp cinnamon
 ½ tsp cardemon
 150 g raisins
 1 tbsp apricot jam
 250 g First Choice Salted Butter
For the Icing:
 1 tub of cream cheese
 200 g First Choice Salted Butter
 1 cup icing sugar

Directions:
For the cupcakes:

Beat the eggs and sugar together in an electric mixer until light and fluffy.

Melt the First Choice Salted Butter. Add the First Choice Salted Butter and vanilla essence to the egg mixture.

Add First Choice Milk and First Choice Amasi and mix.

Sieve flour, baking powder, salt and sugar together.

Fold the flour mixture and egg mixture together. (Don't over-mix)

Add the orange zest, spices, raisins and grated apple.

Place the cupcake liners in the muffin pan.

Fill the cupcake liners 3/4 with the batter.

Bake the cupcakes at 180°C for 15 to 20 minutes.

Heat up the apricot jam in the microwave for 1 minute and brush over the cupcakes.

For the Icing:

Beat the First Choice Salted Butter in the electric mixer until fluffy. Add the icing sugar and vanilla essence and mix. Mix the cream cheese in slowly, until the mixture is smooth. Making sure not to over-mix.

Now you can put the cream cheese buttercream in a piping bag and pipe a cross on the cupcakes.

Decorate the cupcakes with your favourite toppings and enjoy!
