Baked Cheese Cake

Ingredients
For the crust:
 100 g First Choice Butter
 1 egg
 ½ tsp salt
 5 tsp oil
 1 ⅔ tsp baking powder
 5 tsp castor sugar
For the filling:
 4 eggs
 1 cup sugar
 ¼ cup lemon juice
 3 tubs of First Choice Smooth Cottage Cheese
 250 ml First Choice Cream
 ½ cup cake flour
For the topping:
 fresh berries and fruit for decoration
 fresh whipped cream
 First Choice Strawberry Dessert Topping

Directions
For the crust:

Pre-heat the oven to 180°C.

Beat the First Choice Butter and sugar together with an electric mixer until light and fluffy.

Add the oil and egg, mix well.

Sift in the flour, baking powder and salt, and mix well.

Press the dough into a well-greased springform pan. Press firmly into the bottom and the sides. Neaten the edges.

Bake the crust for 10 minutes and allow to cool down completely.

For the filling:

Beat the eggs and sugar until light and fluffy.

Add the lemon juice, First Choice Cottage Cheese, First Choice Cream and cake flour. Mix well.

Pour the batter into the crust and bake at 180°C for 10 minutes.

Lower the temperature of the oven to 125°C and bake for an hour.

Allow to cool completely and decorate with First Choice Strawberry Dessert topping, cream and seasonal fresh fruit & berries.
